Gluten
This large protein is contained in many cereals such as wheat, barley, rye, oats, kamut or spelt. Therefore it is an integral part of our staple diet. It is found especially in the bread and pasta but also pizzas, pastries, sauces, preserves. It adds almost systematically the gluten in the dishes prepared in order to improve the appearance.
The gluten gives the dough kneaded to its elasticity and ensures the masticabilité of cereal products baked in the oven.
The digestive enzymes
Synthesized by the digestive system, the digestive enzymes that allow the splitting of complex molecules into simple molecules, which are assimilated by the body. They are produced in saliva, the stomach and the pancreas.
Each enzyme acts on a specific substrate, thus, has identified three types :
